If you’ve seen me since I moved out, then you’ve probably heard me say what a challenge it is to cook for one. I’m not that much of a leftovers person (don’t judge), but I’m slowly learning that I’m bound to have leftovers when I’m cooking for myself. And, since I live alone, I have to make sure my food gets eaten. I can’t tell you how many times I’ve thrown things out that have been sitting in my fridge for too long.
One thing I do love now that I live alone is trying different recipes. You might’ve seen that I tend to pin as much food as I do fashion. I’m sharing some of the recipes I’ve pinned recently that I think will be delicious summer meals. I love that I can easily adjust these for one person.

Tex-Mex Chopped Chicken Salad
I always feel silly for pinning salad recipes, because it’s just salad, but they always catch my eye. I love Tex-Mex, so this chopped chicken salad is a no-brainer. And I no that it’s a salad that I wouldn’t mind eating a few times a week, aka an easy salad to meal prep.
Grilled Shrimp and Vegetable Bowl
I love food bowls! Shrimp is delicious, and I love that it’s high in protein and low in calories. This recipe is from Skinnytaste.com. I just bought the author’s cookbook, Skinnytaste Fast and Slow. I actually got the book for my mom for Christmas, and loved it so much that I had to get it when I moved out. Her recipes are always delicious. I really appreciate that she makes them healthy yet super delicious. I don’t feel deprived eating them!
Cilantro-Infused Jalapeño Cocktail
Okay, so this isn’t food, but I’m including it anyways. I’m a sucker for a good margarita, and I love the idea of this spicy one. I just got a bar cart, and I have a couple of cocktail books, so I’m anxious to try some fun summer cocktails like this one!
Skinny Queso Dip
Margaritas and queso for happy hour? Count me in! A skinny queso dip that isn’t as bad for you? Okay, now I’m really sold. Definitely intrigued by the fact that it has coconut milk in it, but I’ll give any queso dip a try.
